My guilty pleasure is watching Tastemade videos and watching cooking shows on Netflix. My favorite cooking movies are Noma & Chef and I've watched them more than once. I love watching people who have a passion to cook and people that use a lot of creativity in their cooking. I also love teaching people how to cook. Recently I made my own version of a Vegan Cubano just because I wanted to taste what the fuss was about, it needs work and better bread but I got the basics down. My struggle has and will always be making healthy food taste great. I take from different sources, my moms old cookbooks, current cookbooks and watching bits and pieces of tv shows, then I form my own recipe vegan style.
Fall is coming soon... I love the fall months. I naturally eat using Ayurveda principles so I tend to have more warming foods In the winter this means I will be cooking more warming foods and spending less time eating fruits and veggies, this means more recipes to share with you... yay!

To me graffiti is like the glitter or confetti, sprinkled on the canvas of this world. I posted this blog a few years ago, with no words and it was titled "Veggie Street Art" the name has changed and photos have been updated and I will continue to update them for you to enjoy. 2013 Post: While walking downtown, I came across this message "Beet's not Beef" on a mail box. Dirty Dozen Plus (+) + Hot Peppers So guess what? I've been depressed and it's bad, I don't want to say how bad, just think of the worst than double it. It's not over yet but I'm here alive and trying as hard as I can. So I have THIS list of all these happy things that I like to do, this is the list they ask you to write when you seek a therapist for depression. So I use it (yep) I really do use it. And so in my depressive state I looked at my list and I committed to it and in that moment it's was like Russian roulette but the gun was loaded and my fate is set in stone. I have to go do something, anything and it's hard and painful but I know I have to keep going on and so I close my eyes and pick one of these things to do and do it, because I know it's good for me and I really like to do what's on my list, it's just when depression sets in nothing seems like fun. (It's so annoying because I love having fun!) So what happens when this list fails me? When this list full of exercise, travel, happy thoughts, meditation, talking to friends isn't freaking working anymore! It's not beating my depression? Why? So do I just give it up, Well,.... I did just that, I let go (kicking and screaming) but I let go. What happen next was something so silly this thought in my head so wild. My mom had a day care when I was growing up I was about 6 and I remember coming home from school and singing with them in a circle this song "Going on A Squeegee Hunt!" I think of it now in my depression and it made/makes me smile so big because my depression is just this simple I "can't go over it, can't go under it ... gotta go through it" just like this kids song. So my dear depression I gotta get through you in order to heal and you are loosing this round because, I'm winning this battle. I don't know if this blog will help anyone or if anyone will read it. I just want to say depression is real and it's HARD no one wants to feel this way. It's ok to admit your not well without feeling stigmatized by people who don't get it, because at the end of the day you matter and you are loved by so many people that understand. So for about a week, I have been staring at my overgrown garden, yep just staring at it. I was thinking this is going to be a lot of work, and It will be but..... staring at it isn't doing me any good. Preparing to hack down my Kale bushes, they are called pants duh, but trust me they grew into huge bushes, almost trees (I blame the Azomite and worm castings) I noticed these pea pod like things growing all over my Kale plant, last year they didn't do this and the year before they didn't either, so why now? I searched the web and found this lovely video. Guess what? after 2 years Kale plants flower and go to seed. 2 years... what? So guys and gals I guess my plant is dying RIP Kale bushes, I didn't even name you guys yet!!! I was thinking I had the everlasting Kale plant but its time on this planet is up. I was able to harvest a few of the seed pods, but a large portion of the plant is still green. So now I wait & stare at my overgrown garden until these pods turn brown and I can harvest them so I can dominate the world with more kale plants!! When I was introduced to Indian food at The Bombay Bar and Grill I was in awe of the plates, the smell of the spices and the allure of trying something new. I enjoyed my time there, they were very kind and to my surprise, most of their food on the menu was, in fact, Vegan or Vegetarian. After that night I knew I had to learn to cook this delicious food. I went to World Market and I bought my first spice box, I was so proud of myself and excited about learning how to cook Indian food. A friend filled it up with more than enough spices, so much I had to get another one. The thing is she never told me what spices they were, after a bit of freak out I went to work, I spent time googling the spices she had given me and tasting them, until I finally became an expert on my spices, In the end, I realized this was the best gift I was ever given. Let me tell you Cumin seeds didn't look like I expected them to look and these black specks that confused me were called Nigella seeds & fenugreek wasn't so fun on my teeth, but I did it!! I figured them out, I and I was ready to cook. I googled and found a cook book called "Vegan Richa's Indian Kitchen" & the whole world of vegan Indian cooking opened up to me. I love making Indian food, it's quick and fun as long as you have all of your food cut up, measured and laid out before you start to cook (in cooking school they called it "Mise en place" Fancy French word for "putting in place") Especially your spices. Making Indian food is fast and quick but if you aren't ready you can really mess it up. With all this being said I am going to try to make this recipe written out as easy to follow as possible. I find myself sometimes looking for more creative ways to spice up my lunch time salads. I was low on lettuce actually has none but I did have an avocado, cherry tomatoes and these amazing micro-greens, (little infant plants). I wanted something quick, filling and easy. This was delicious, all I did was squeeze a lemon over the avocado for a citrus uplifting taste that helped to energize the rest of my day.

These potatoes are a beautiful addition to any dinner table or holiday party that you may have this season. They are vegan and gluten free, they taste that great, and this dish is simple and easy to make. I have taken this to family dinners and the dish has ended up completely gone.

INSTRUCTIONS
Preheat the oven to 375 degrees.
Lightly grease a 9 x 13-inch pan. Soak cashews overnight or boil water and pour it over them and let sit for 15 min & drain the water out. This will soften the cashews and ensure a silky, smooth cream. *if you have a high powered blender like a Vitamix or Blendtec this may not be necessary In a blender, puree cashews, water, garlic, and salt. Transfer to a large bowl. Add thyme and scallions to the cashew cream and mix with a spoon. In the pan, arrange half of the sliced potatoes, overlapping, and pour half of the cashew cream on top. Repeat for the second layer. Dust the top with paprika and cover the pan with foil. Bake for 45 minutes. Remove foil and continue baking another 15 minutes, or until potatoes are fork tender and lightly browned on top. Garnish with fresh thyme before serving and adjust salt to taste.
